Food!

Ground Chicken Stir Fry
You can really use any veggies you want in this dish!

1lbs ground chicken
2 Peppers (your choice in colors)
1 can of water chestnuts
Frozen Broccoli (Steam fresh bags)
8oz pkg of mushrooms

Chop your peppers and mushrooms. Cook your broccoli - I used steam fresh because its quicker!

In a bowl mix together
1 cup low sodium chicken broth or stock
1/4 cup hoisin sauce
1 teaspoon powdered ginger
1 tablespoon soy sauce
2 tablespoons of corn starch

Cook ground chicken with a little olive oil and sesame oil in the pan. Set aside
In a wok or big pan add alittle olive oil and minced garlic- cook your peppers and mushrooms to your liking! I like mine with still a little crunch! Add water chestnuts and broccoli, add cooked ground chicken  mix all together. Add Sauce and cook until all blended and heated through!

Serve alone, or with Rice! So good!

What I'm Thankful For...

"My life isn't perfect but I am thankful for everything that I have"
🍂

This time of year I really try and think of what I am thankful for. It's not about the food I get to stuff my face with, or making a Christmas list or buying gifts for people for me. OF COURSE I love that but that's not what's important. This year was one of the best years yet for me. I am extremely happy, my family is healthy and has grown closer than ever. My friends are all still amazing and I am so thankful for all my friendships I have.. I have also made some new friends! I can genuinely say I can count on every single person in my life no questions asked!
🍁
Health is something that has been an important to me this year.. after loosing Kate I really want to make sure I am healthy (Even though you can't stop breast cancer from coming) but I've keeping up on my Dr's appointments, thinking twice what I put into my body, trying to workout, stay active. etc
🍁
My family went through a scary incident this year. My Nana got really sick with MRSA but she bounced back fairly quickly and I am so thankful for that! We all learned from what happened and my family is just very aware and more in tune with one another especially her! She learned to text :)
🍁
I don't have to boast about how thankful I am for Derrick... but I AM. He's amazing and we share an awesome healthy life together! His family has become my family and vice versa, we are all very lucky to have one another.
🍁
Being Thankful is something you should feel all the time not just this time of year. Today we get so wrapped up in what we don't have or what we wish we had etc, but we should all try and just be content with our lives.. If your not satisfied with your life it's your responsibly to change it. I did that a couple years ago and it was the best thing I've ever done... and I am thankful for that strength that I have mentally!
🍁
Being able to use my creativity in different ways is something I am thankful for. I started this blog to help get some ideas off my chest in hopes people will like it! I also took a lot of crafty classes this year that I really enjoyed doing with friends!

I wish everyone a healthy and happy holiday season! We are all about to become busy but just remember to take a few minutes a day and just realize how thankful YOU are for everything in your life!
🍁
Some other things I am thankful for...

Thankful for my positive outlook on life.
Thankful for my home
Thankful for my job
Thankful for my vacations I've taken this year
Thankful for Being safe and healthy this year.

New favorite things!

Leopard Print Kimono
Found this on Amazon. I thought it would be a great fall piece.. its lightweight and very stylish The fabric is not sheer, unlike a lot of kimonos! .You can wear with leggings or jeans. They have a few different prints and it was only $16.99

Optical Illusion Complexion Primer

WOW- I am so in love with this primer. I actually didn't buy it. I did a primer swap with a friend of mine. This one didn't work out for her, but it definitely works for me. I have been wearing this non stop. This legit instantly blurs your skin like you have a airbrush filter on your face!  It's velvety soft, lightweight and dries as a matte finish. When this runs out I will purchase it for sure. Thanks Lindsay!!

Pillow Covers

I am A HUGE fan of pillow covers. I think its a great way to swap out your decor without spending a ton of money. Decorative pillows can be expensive! I found these on Amazon. The black ones came in a two pack! Both are a linen blend. They look great on my bed!

Custom Book Stacks
My friend Sam had these in her home and I thought they were so nice... so I got these made for Derrick's sister and brother in law they just bought a new house so I wanted to get them something cute for their new place. You can get anything you want on them!  I found these on Etsy and she loved them! They look so good on her mantel above the fireplace! I will be purchasing for my house down the road for sure!

Bed Head Blow Out Dryer

WOW- I don't know how I didn't get this sooner, its a game changer- ditched the straightener this does it all and gives my Asian hair incredible volume! It really is salon results! Get yourself this one!

MY skincare

I've never been one for an extensive skincare routine, mainly because I'm lazy AF in the AM & PM, but I have learned that your skin needs care even when it looks good! I have struggled with my skin for a very long time. It's not perfect by any means! I breakout, I have scarring, I have oil, the occasional inflammation pimples,  the list goes on. This year a really tried to focus on my skin and take it seriously, and honestly I should have done this WAY sooner in life. I was always one to try new products all the time then switch them out and I WAS NOT HELPING MYSELF OUT AT ALL. I have finally found a skincare routine that works for me...

I started to get facials. Its money but it's worth it! I see a woman who uses all natural products that has really helped me out, plus she gives the best scalp massage :)

I spend money on my skincare, my skin does not allow me to just buy from CVS or Target. I do use one though I'll get into that. The Mario Badescu line really works for me.

I use more than just a face-wash. I used 2 different ones I switch off daily, I used a facial spray, toner, vitamin c serum. face-masks, and moisturizer. I wash my face before bed every single night! EVEN WHEN IM DRUNK!

I make sure to drink water. You might think its not important but it is!

I go through my makeup more, and clean my brushes!

Derma Rolling has helped me a bit. I bought one off Amazon. I try to do this every few weeks! You just have to make sure you really clean it!

St. Ives Acne Control Wash- I use this in the morning when I take a shower. It's a scrub but a nice feeling one! Smells great too! Only one I can get at Target!

Mario Badescu- Acne Facial Cleanser- I use this every night when I wash my face.

Mario Badescu- Facial Spray With Aloe, Herbs and Rosewater- I will spray this on my face after a wash it. It leaves it feeling very nice! This can help reduce the redness of irritated skin.

Mario Badescu- Facial Spray with Aloe, Cucumber and Green Tea- I will use this when I need hydration to my skin! I used this a lot last winter. I will switch back and forth from the Rose water and this one depending on how my skin is looking/feeling.

Mario Badescu- SPECIAL CUCUMBER LOTION- I  WILL USE THIS AFTER I WASH MY FACE BEFORE A SPRAY! I apply to skin with a cotton pad. This Removes excess oil and T-zone shine. Helps dry up existing breakouts.

Mario Badescu- Oil Free Moisturizer- I will use this to clean skin before makeup and all that

Tru Skin Vitamin C Serum- I swear by this stuff! I am on my second bottle I use this after I apply all my products. I will use before bed and before I put on my makeup.

Mario Badescu- Buffering Lotion- I use this when I can feel a pimple starting to form or when I have a full blown pimple. troubled areas etc. This is a spot treatment. I have been using this less and less which is a good thing. But it definitely helps with pimples/ breakouts for sure!

The Better Skin Co- Lava Magik- I got this mask/ cleanser in my FFF box and I have been liking this lately as well... I have only used it a few times but so far so good!!

Easy Things to Cook!

Life has been so busy lately that I didn't even realize how long I haven't posted for! Here are a few recipes I have made recently that have been a hit! ENJOY!!

Greek Chicken Bowls

Preheat to 375

**I made white rice with these but you can also do them without **  Lettuce would be nice with these- I'll do that way next time!

I used chicken tenders. Marinate them for 30 min- in olive oil, lemon and lime juice, salt pepper basil.  Bake them for 25-30 min or until done.

CHOP INTO CUBES:  2 zucchini 2 peppers, 1 small red onion
Add to a large skillet drizzle with olive oil salt and pepper and saute until done.
Assemble your bowl with rice, veggies. and the chicken
Then top with feta, olives and some Tzatziki (not shown)

Chocolate Chip Cookies... with BISQUICK?!

You will always make them this way now!! I had this recipe stashed away and brought it out when I hosted football Sunday!

I stick of butter (softened)
1 teaspoon vanilla
1 cup of packed brown sugar
1 egg
2 cups Bisquick
1 cup semi sweet chocolate chips

Mix everything together in a bowl.... form cookies on sheet. Bake at 350 degrees until done. I like mine super soft so I cook mine for 15 min

One Pot Pasta with Ground Turkey

Olive oil
1 small onion
Minced garlic FRESH
1.5 lb Fresh tomatoes chopped
3 cups of low sodium chicken broth
Chopped Basil
8oz spaghetti
1lb ground turkey
Salt & Pepper (if you need it)

Cook your ground turkey first in a separate skillet and set aside. Season with salt pepper and onion powder
Heat up olive oil in your pot. Add the onion and garlic, saute until they start to brown. Add fresh chopped tomatoes, chicken broth, basil and pasta, and ground turkey ( I broke my spaghetti in half so it would fit in the skillet) Push the pasta down so its submerged in the liquid- cover and switch to medium low to cook for about 8 minutes or until the pasta reaches what you like! The liquid will go down a little bit so add a little bit more broth cover and cook for another couple of minutes.. then done! It was honestly amazing

One Sheet Chicken Fajitas

Preheat oven to 400
Chicken Tenders
Any color peppers (3)
1 lg onion (I like the sweet onions)
Fajita seasoning

Slice peppers and onions and put on sprayed baking sheet. Place chicken tenders on there as well. Drizzle olive oil on everything and rub into everything. Sprinkle fajita seasoning all over chicken. You can put on the veggies too but I don't.

Grab your choice of wraps and toppings and there is your fajita!

Roasted Veggies with Mini Potatoes

1 small head of broccoli
2 Zucchinis
Sweet onion
2 peppers
2 summer squash
Bag of mini potatoes (I slice in half)

Cut up all veggies, place into big bowl and toss with olive oil and whatever spices you want! I personally like the good seasons Italian packet! Lots of flavor.. I only use about half! Bake 400 degrees for about 35 min- more if you like them a little crispy.

My Favorite Salad

It's a really fresh salad I love to make! It's full of veggies and very tasty! I will add chicken if I'm just having this! But it makes a great side!

Romaine Lettuce washed and chopped
Mix some spring mix in too!
Sauteed zucchini & red onion ( let cool a little before you top on salad)
Edamame (no shell)
Beets chopped
olives
Goat cheese (not pictured) but I add it.
Your choice of salad dressing (this is good with a vinaigrette or italian)

Quick and Easy Snacks for Guests

A month ago I had a last minute get together with friends!
I ran out and got the following.. Who doesn't like cheese and crackers? Just display nicely!

Baked Salmon with Creamy Dill Sauce

I keep my salmon pretty simple. I spray with olive oil- season with salt, garlic powder, lemon juice and dill! Sometimes I will add a little butter depending on the day.

Bake at 450 until done!

Creamy Dill Sauce (You'll dip everything in this)
1 cup sour cream
1/2 cup mayonnaise
 5 teaspoons dried dill
1 teaspoon garlic powder
1/2 teaspoon salt
2 teaspoons fresh lemon juice both are great in this recipe

Stuffed Peppers (Ground Turkey)

Bake at 450

4 Peppers tops and cores removed
1 cup uncooked rice (I used brown, but you can use whatever)
medium onion, chopped
1 lb. ground turkey or any ground meat
Half a can of tomato sauce
Small Can of corn
Half can of back beans
Shredded cheese of your choice

Boil Peppers for 6 min on stove top
Saute chopped onion in some olive oil until tender. Set aside.
In the same pan cook ground meat until done.
Add cooked rice, onions, sauce, corn, and black beans.
Stir, and let cook for a couple of minutes

I cut my peppers in half. Fill each pepper with the mixture. Top with cheese
Bake covered for 30 35 min
Bake uncovered for 10 min or until cheese is bubbly

*If you have leftover filling you can eat it for lunch the next day*
