Easy Things to Cook!

Life has been so busy lately that I didn't even realize how long I haven't posted for! Here are a few recipes I have made recently that have been a hit! ENJOY!!

Greek Chicken Bowls 



Preheat to 375

**I made white rice with these but you can also do them without **  Lettuce would be nice with these- I'll do that way next time! 



I used chicken tenders. Marinate them for 30 min- in olive oil, lemon and lime juice, salt pepper basil.  Bake them for 25-30 min or until done. 

CHOP INTO CUBES:  2 zucchini 2 peppers, 1 small red onion 
Add to a large skillet drizzle with olive oil salt and pepper and saute until done. 
Assemble your bowl with rice, veggies. and the chicken 
Then top with feta, olives and some Tzatziki (not shown)



Chocolate Chip Cookies... with BISQUICK?! 


You will always make them this way now!! I had this recipe stashed away and brought it out when I hosted football Sunday!

I stick of butter (softened)
1 teaspoon vanilla 
1 cup of packed brown sugar 
1 egg
2 cups Bisquick 
1 cup semi sweet chocolate chips 

Mix everything together in a bowl.... form cookies on sheet. Bake at 350 degrees until done. I like mine super soft so I cook mine for 15 min


One Pot Pasta with Ground Turkey


Olive oil 
1 small onion 
Minced garlic FRESH
1.5 lb Fresh tomatoes chopped 
3 cups of low sodium chicken broth 
Chopped Basil 
8oz spaghetti
1lb ground turkey
Salt & Pepper (if you need it) 

Cook your ground turkey first in a separate skillet and set aside. Season with salt pepper and onion powder 
Heat up olive oil in your pot. Add the onion and garlic, saute until they start to brown. Add fresh chopped tomatoes, chicken broth, basil and pasta, and ground turkey ( I broke my spaghetti in half so it would fit in the skillet) Push the pasta down so its submerged in the liquid- cover and switch to medium low to cook for about 8 minutes or until the pasta reaches what you like! The liquid will go down a little bit so add a little bit more broth cover and cook for another couple of minutes.. then done! It was honestly amazing



One Sheet Chicken Fajitas 


Preheat oven to 400
Chicken Tenders 
Any color peppers (3)
1 lg onion (I like the sweet onions)
Fajita seasoning 

Slice peppers and onions and put on sprayed baking sheet. Place chicken tenders on there as well. Drizzle olive oil on everything and rub into everything. Sprinkle fajita seasoning all over chicken. You can put on the veggies too but I don't. 

Grab your choice of wraps and toppings and there is your fajita!  



Roasted Veggies with Mini Potatoes 


1 small head of broccoli
2 Zucchinis 
Sweet onion 
2 peppers 
2 summer squash
Bag of mini potatoes (I slice in half)

Cut up all veggies, place into big bowl and toss with olive oil and whatever spices you want! I personally like the good seasons Italian packet! Lots of flavor.. I only use about half! Bake 400 degrees for about 35 min- more if you like them a little crispy.

My Favorite Salad


It's a really fresh salad I love to make! It's full of veggies and very tasty! I will add chicken if I'm just having this! But it makes a great side!

Romaine Lettuce washed and chopped
Mix some spring mix in too!
Sauteed zucchini & red onion ( let cool a little before you top on salad)
Edamame (no shell)
Beets chopped 
olives 
Goat cheese (not pictured) but I add it. 
Your choice of salad dressing (this is good with a vinaigrette or italian)


Quick and Easy Snacks for Guests


A month ago I had a last minute get together with friends! 
I ran out and got the following.. Who doesn't like cheese and crackers? Just display nicely! 


Baked Salmon with Creamy Dill Sauce


I keep my salmon pretty simple. I spray with olive oil- season with salt, garlic powder, lemon juice and dill! Sometimes I will add a little butter depending on the day. 

Bake at 450 until done! 

Creamy Dill Sauce (You'll dip everything in this)
1 cup sour cream
1/2 cup mayonnaise
 5 teaspoons dried dill
1 teaspoon garlic powder
1/2 teaspoon salt
2 teaspoons fresh lemon juice both are great in this recipe


Stuffed Peppers (Ground Turkey)


Bake at 450

4 Peppers tops and cores removed
1 cup uncooked rice (I used brown, but you can use whatever)
medium onion, chopped
1 lb. ground turkey or any ground meat
Half a can of tomato sauce 
Small Can of corn
Half can of back beans 
Shredded cheese of your choice

Boil Peppers for 6 min on stove top 
Saute chopped onion in some olive oil until tender. Set aside. 
In the same pan cook ground meat until done. 
Add cooked rice, onions, sauce, corn, and black beans. 
Stir, and let cook for a couple of minutes 

I cut my peppers in half. Fill each pepper with the mixture. Top with cheese
Bake covered for 30 35 min 
Bake uncovered for 10 min or until cheese is bubbly 

*If you have leftover filling you can eat it for lunch the next day*

Hammer & Stain (South Shore)

I am pretty much OBSESSED with this place. If you haven't been it's such a fun experience! It's a wood and paint DIY studio! They host events all the time but they sell out SO QUICKLY- They get posted on their Facebook page, so follow them so you get the notifications! If you are ever interested just buy a couple of tickets and find a friend to go with! I usually go with a couple of friends and its such a fun girls night out! I've done a few events and even hosted my birthday party there last year! 
You can also BYOB, and food! So you can sip on something while you work on a project! The owner Janet and her staff are SO nice, and the studio is decorated awesome. Don't be intimidated by some arts & crafts! Its fun!
This is a great addition to Easton for sure!
