Summer Purchases!

I have been wearing these on the weekends! They are simple, comfy and really make an outfit look great! They are also ON SALE!!

I have been reaching for this suit alot lately, the colors are great for summer and the fit is comfortable as well!



Amazon Cover up 
I have been loving this lately! It's lightweight and its perfect to throw on over a bathing suits and to pair it with some jean shorts! It has cute ties on the side that help make it look flattering! 


Waffle Knit Tank
I purchased this off Amazon too! I love the fit you can wear it with a pair or shorts or even leggings! This shirt comes in a ton of different colors! I recommend this top for sure! you can even wear it in the fall under a cardigan! 



Booty by Brabants Croco Skin Leggings 
I have a few pairs of her leggings but I always bought the original style. I have had my eyes on this color for a while but it was the croco style so I decided to give them a try! They are thicker than the originals but I do really like them!  I have been putting them on for my workouts and just lounging at night with a sweatshirt! The Rose color is super pretty! I plan on picking up the gray ones next!


Lazy Jane Air Dry Shampoo
I picked this up after I saw a blogger post about this. I used it a few times now and I do like it alot! I haven't been blow drying my hair at all lately so this helps eliminate frizz and flatness without the heat! You use it just like regular shampoo and conditioner and it smells really nice!

cookin!

Asian Garlic Noodles 


I went pretty plain with the salmon that night, just did a simple olive oil, salt and pepper. BUT THESE NOODLES ARE TO DIE FOR! & have a TON of flavor! Make it when your in the mood to have a cheat night for sure!! I have made these a couple times now!

7 oz spaghetti (I use DeCecco) I really like the texture 
4 Cloves Garlic (FRESH, MINED)
3 Tablespoons of butter
2-3 Tablespoons of Olive Oil 
2 1/2 Tbsp soy sauce 
2 1/2 Tbsp oyster sauce 
Chopped Scallion
1-2 teaspoons of sugar 

Cook pasta in lightly salted water, set aside a little past water in a bowl for later on! Drain pasta and rinse under cold water to avoid further cooking and sticking. 
While pasta is cooking chop up and heat garlic up in a large pan with olive oil and butter until garlic softens (do not BURN GARLIC) 
Mix up the sauce in a separate bowl (soy, oyster, sugar)
Add noodles to the pan once the garlic is done sauteing while keeping the heat on. Toss the noodles in with the garlic then the sauce mixture with some scallions. Add in a little of the saved pasta water to help everything mix up smooth 
Top with grated parm cheese and more scallions if you would like!

Quick Scallion Pancakes


I found this recipe on a bloggers website I follow and just had to make them! They take a couple to really get it down but they were OH SO GOOD! I would make one to taste first to see if you want to add more salt!

1 Cup of flour
1 plus 1/3 cup of water
4 scallions chopped small
1/8 tsp salt
Vegetable Oil for pan frying and brushing the top 

Mix the flour, water and the salt in a bowl and whisk until smooth, Add in the scallions it should be like a heavy cream but not too thick add water if you need to thin it out. 
Heat 1tbs of vegetable oil in the pan or just enough to cover the bottom of the pan over medium heat! 
Use a large ladle to pour some badder into the center of the pan and swirl  around the pan and spread it out as thinly as possible
Cook 4-5 min over medium or until the bottom is lightly browned and crisp (life the corner to check it)
flip over and cook the other side, also brush the top of it with oil for extra brownness 
cut up an enjoy!

Stuffed Sweet Potatoes 
with ground turkey, kale and chickpeas


 These have taken a couple of times to nail down my favorite way to cook them! They make a lot so you can reheat for lunch the next day! They are filling and pretty easy to make! 

1 lb ground turkey
1 can of chickpeas (you won't use it all)
Kale
Marinara sauce (small can will be fine) unless you can use the rest for something else 
4 sweet potatoes (the ones I got were small) 
Shredded cheese 

Roast sweet potatoes until done 
set them aside to cool off 
Cook ground turkey, once done add kale chickpeas (I used half the can) and some marinara sauce( I use enough to get everything bined together) 
set aside and start mushing up the sweet potatoes inside scoop the turkey mixture in each I tent to overstuff them! 
top with some cheese and bake them until the cheese is melted and the inside is hot!

Chopped Salads


 You can really chop anything to put in a salad! they are so easy to eat too because you can just scoop it into your mouth!
For my salad I did chopped romaine, cucumbers, chickpeas, leftover cooked brussel sprouts, shredded cheese, sprinkle of parm cheese topped it with some beets I had in the fridge, and wonton strips!
For dressing I did: 1/4 cup olive oil, 2 tbsp apple cider vinegar, 1/2 tsp Dijon mustard, 1 clove of crushed garlic, half juice from lemon- pinch of salt and pepper. Whisk all together and pour over your chopped salad!
